Responsibilities
- Oversee daily kitchen operations and lead service execution in a 600–800 cover-per-day restaurant.
- Partner with the Executive Chef to maintain exceptional food quality, consistency, and presentation.
- Lead, coach, and develop culinary team members while fostering a positive, accountable culture.
- Manage labor, scheduling, food costs, inventory, ordering, and waste control.
- Ensure compliance with all health, safety, and sanitation standards.
- Maintain high standards of organization, cleanliness, and kitchen efficiency.
- Assist with menu execution, recipe adherence, and ongoing culinary innovation.
Qualifications
- 3–4+ years of experience as a Chef de Cuisine or higher in a high-volume upscale or fine dining restaurant.
- Strong background in upscale American cuisine with significant seafood experience.
- Proven success leading large culinary teams in restaurants serving 500+ covers daily.
- Solid understanding of food and labor cost controls, inventory management, and kitchen financials.
- Passion for mentoring and developing culinary talent.
- Excellent leadership, communication, and organizational skills.
