Hot Kitchen Supervisor
Salary: $70,720
Location: Inglewood (LAI)
Reports to: Executive Chef
Job Description/Responsibilities:
- Provide direction, guidance and supervision to employees to enable them to work more effectively
- Knowledge of Hot Food production processes
- Improve production process to increase productivity and process controls
- Ensure “food ready time” is met daily for Cold Food packing
- Ensure all cooks accurately follow recipes and meals are produced to specification; ask questions
- Ensure no shortages occur and portions control is accurately managed
- Train employee in production processes and measurements
- Proactively attend to employee relations issues to resolve them effectively and promptly
- Ensure controls are in place to manage food costs and report waste
- Manage rotation of hot meals produced and minimize waste
- Manage rotation of bulk food production to FIFO
- Hold regular F2F communication meeting with employees to review production results
- Hold regular F2F communication meeting with employees to review safety & hygiene
- Communicate shift schedule changes to employees
- Manage production schedules and processes to minimize overtime
- Manage work force accountability and ensure employees have tools needed for production
- Prepare purchasing orders daily for purchasing dept. to meet production requirements
- Prepare daily production orders for storeroom to ensure product is pulled and thawed on time for production
- Ensure that HACCP standards are achieved and control documents are completed
- Verify all production sheets at the end of each shift to ensure all items were produced
Other Responsibilities and duties will include, but not be limited to:
- Knowledge of internal policies and procedures
- Knowledge of HACCP requirements, GMP and sanitation requirements.
- Competent to work independently, ask questions and seek direction as needed.
- Knows and follows all safety requirements; strives to maintain a safe work environment.
- Effectively gives and receives feedback
- Must be able to function within a team environment.
