THE JOB:
As a Chef Mixologist at Bellagio, you will lead and elevate the bar and mixology program, creating innovative beverage experiences that complement one of the most iconic luxury destinations in the world. You will inspire and develop a high-performing team, drive operational excellence, and deliver exceptional guest experiences through creativity, precision, and service. With a focus on quality, consistency, and financial performance, you will play a key role in shaping the atmosphere, advancing the beverage program, and bringing unforgettable moments to life for every guest. All duties are performed in accordance with company policies and procedures.
THE DAY-TO-DAY:

Responsible for execution of policies, operating procedures, pricing initiatives, training programs, directives, bar menus, rules and regulations for the bar staff. Owns department execution of F&B and/or company-wide initiatives and programs. Maintain the highest standards of health, sanitation and cleanliness within all areas of the bar. Responsible for completion of all company compliance training for staff

Review, create and develop new bar menu items and concepts to remain current with food trends and marketplace and is responsible for promoting bar/mixology department through marketing

Manages Human Resources responsibilities to include: creating a work environment that promotes teamwork, performance feedback (coaching and counseling), recognition, mutual respect and employee satisfaction; quality hiring, training and succession planning process that encompass the company’s diversity commitment; adherence to the company’s status quo third party representation philosophy; compliance with company policies, legal requirements, employment law, and collective bargaining agreements

Interacts with internal/external guests to ensure satisfaction and product quality. Reacts to any feedback on guest complaints and takes any appropriate action

Maintains excellent knowledge of property’s beverage products, menu items and equipment used to perform duties
THE IDEAL CANDIDATE:

2+ Years of prior relevant experience

Bachelor's Degree from an accredited Culinary Institute, or equivalent experience

Previous experience managing employees under a collective bargaining agreement preferred

Previous experience working in a bar in a high-volume luxury restaurant preferred
