INTRODUCTION
As the Sushi Chef at Town Club, this position will be responsible for partnering with the Town Club Chef de Cuisine on the ordering, scheduling productions and executing all foods related to sushi. This position will work closely with the Town Club Chef de Cuisine to ensure quality, employee management and cost standards are met.
ROLE AND RESPONSIBILITIES
The Sushi Chef is responsible for the following:
- Monitoring financials for sushi line purchase vs sales with Town Club Chef de Cuisine and Executive Chef
- Maintaining food safety programs specific for sushi operation in accordance to health codes of Los Angeles County and Jonathan Club
- Creating menus, breakdowns, costing all menu items for Sushi line with Town Club Chef de Cuisine and Executive Chef
- Assisting with sushi needs for both the Beach Club and Town Club if needed
- Effectively communicates verbally and in written forms to provide clear directions to the team
- Maintains all equipment in proper operational conditions, cleanliness and document monthly on Jonathan Club Monthly Self Checklist
- Ensures the highest level of member satisfaction, quality, operating and food costs on an ongoing basis
- Follows proper handling and right temperature of all food products
- Monitors performance of sushi kitchen team, and ensure all procedures are completed on timely manner
- Identifies the developmental needs of sushi culinary team and provide mentoring to improve their knowledge and skills
- Sets an example to the team for following the kitchen guidelines on all matters
- Performs other duties as assigned
BASIC QUALIFICATIONS
- Minimum 3 years of experience in cooking in a well-established sushi bar or Japanese restaurant
- Flexible working hours subject to demands of the business
- Culinary Certificate or Degree preferred
- Ability to lift up to 50 pounds
- Ability to bend, reach, stoop and stretch
COMPENSATION
- Salary Range: $80,000/year - $90,000/year
