The Monarch San Antonio, part of the Curio Collection by Hilton, is a 200-room, 17-story boutique hotel located in the Hemisfair District of downtown San Antonio. Position Summary
The Chef de Partie is responsible for managing a designated kitchen section and delivering consistently high-quality dishes in accordance with five-star luxury hotel standards. The role requires strong technical skills, leadership, organization, and strict adherence to quality, hygiene, and brand standards.
Essential Functions
Pastry Production:
- Prepare and execute desserts, pastries, breads, cakes, and plated desserts as directed
- Assist in the production of items for restaurants, banquets, events, and room service
- Follow standardized recipes, portion control, and plating guidelines
- Support chocolate, sugar, and bakery production as assigned
Quality & Presentation:
- Maintain consistent quality, flavor, and visual presentation in line with luxury hotel standards
- Ensure products are prepared fresh and displayed attractively
- Perform daily quality checks of ingredients and finished products
Hygiene, Safety & Standards:
- Comply with HACCP, food safety, and sanitation regulations
- Maintain cleanliness of workstations, equipment, and storage areas
- Follow proper food handling, labeling, and storage procedures
Teamwork & Operations:
- Work closely with pastry team members to ensure smooth service
- Follow instructions from senior pastry chefs accurately and efficiently
- Perform any other duties as assigned
Inventory & Cost Control:
- Assist in receiving, storing, and rotating pastry ingredients
- Minimize waste and report shortages or quality issues
- Properly use and care for pastry tools and equipment
Qualifications & Experience
- Certificate or diploma in Pastry Arts / Baking / Culinary Arts preferred
- Minimum 1–3 years of experience in a professional kitchen; luxury hotel experience is an advantage
- Basic knowledge of pastry techniques and baking fundamentals
- Food Handler Certification
