Role Summary:
- Lead daily culinary tasks, ensuring cohesion throughout all stations, in collaboration with culinary management team. Prepare and cook meal ingredients, dishes, condiments, and other items. Has knowledge and ability to work the full line (all stations). Responsible for advanced prep and cooking (such as sautéing and grilling).
Responsibilities:
- Prepare various ingredients to be used in the creation of menu items. Preparation tasks include washing, cutting, peeling, and portioning in support of appetizer, fry, pantry, sauté, and grill stations.
- Prepare meat and fish and assists in related cooking/butchering techniques.
- Assist culinary leadership team in leading and communicating daily tasks and priorities.
- Assist in welcoming and onboarding new culinary team members.
- Monitor pace of daily culinary operations. Motivate and encourage team to meet daily objectives.
- Contribute to menu development. Assist in organizing, planning, and execution of new menu items.
- Responsible for setting the line for daily operations as well as closing procedures.
- Proactively identify areas of opportunity within culinary operations and provide feedback to leadership team. Assist in creating, revising, and executing standard operating procedures, as needed.
- Act as a liaison to culinary and food and beverage teams. Ensure cohesive and consistent presentation and quality of menu items.
- Assist in duties of all prep and line cook positions, as needed.
- Prepare bulk food items for future use.
- Assist with unloading, inspecting, and storage or raw ingredients and supplies.
- Maintain compliance with applicable health, safety, food handling, and hygiene codes and standards.
- Assist in controlling food loss.
- Handle special requests of guests promptly and professionally.
- Check pars for shift use; determine necessary preparation, freezer pull, and line set up. Note any out-of-stock items or possible shortages.
- Report to work on time and in full uniform.
- Each associate is expected to carry out reasonable requests by management, which the associate is capable of performing.
- Each associate will be required to follow the rules as found in the Concord Hospitality Handbooks.
Desired Skills and Experience:
- Fine dining cooking experience required, preferably in lead role.
- Experience in a full-service hotel a plus.
- Second shift availability (including weekends) required.
Compensation:
- The starting pay for this position is $21.00, depending on experience.
