Job Summary:
Responsible for the food and beverage operation of the assigned restaurant. Also responsible for assisting in the financial success of the assigned restaurant. You are expected to adhere to the company’s mission, vision and value statements. Be knowledgeable of the company’s management systems, policies and initiatives for Hospitality, Environmental, and Health and Safety. You have specific responsibilities within these areas and are expected to understand them.

Job Responsibilities:
- Ensure all company policies, procedures, service standards and assigned duties are performed correctly and efficiently.
- Maintain a positive and professional rapport with all staff and guests.
- Responsible for managing and attaining revenue goals for daily F&B and event operations.
- Responsible for purchasing and controlling all beverage inventory of the locations.
- Responsible for purchasing and managing all supplies necessary.
- Responsible for adherence to NPS and Brand Standards, conduct regular audits to ensure compliance.
- Become knowledgeable of all Food and Beverage items available.
- Become knowledgeable of general information on GTLC operations and National Park.
- Conduct initial and ongoing training of all service staff ensuring that all company policies, procedures, service standards, P.O.S. operations and assigned duties are performed correctly and efficiently.
- Assist Manager in scheduling staff as business levels dictate. Also ensure that staff schedules are within budgeted labor guidelines and that labor cost percentage is at or below budget.
- Work with Managers on daily Pre-Shift meetings with the staff to review specials, concerns of the day and any other information important to the F&B Department.
- Work closely with the Sales and Events team to review all tour groups, convention group and private group reservations.
- Ensure prompt accurate service anticipating guests’ needs.
- Talk to all guests and handle their complaints.
- Be hands on. Assist directly with food and beverage service as necessary.
- Ensure cash drop and receipts audit pack according to training standards at the end of the shift.
- Work closely with the Culinary Team and communicate all menu concerns, service timing and special requests.
- Responsible for maintaining payroll including tip and group service charge distribution and submitting it according to assigned deadline.
- Attend Departmental and Manager Meetings as assigned.
- Assist in implementation of the opening and closing procedures.
- Organize staff sales incentives to encourage up-selling to maximize revenues.
- Responsible for the cleanliness of the restaurant maintaining a clean and organized work area.
- Responsible for maintaining all restaurant equipment in operational order and report all concerns to the Maintenance or IT Dept.
- Assist in managing guest reviews by replying to Medallia reviews and implementing corrective measures.
- Maintain a professional, well-groomed appearance and pleasant demeanor.
- Promote a positive work environment.
- Handle employee issues as they arise (coaching, discipline, training, scheduling, payroll, etc.).
- Support Food and Beverage management.
