Job Summary
Rebel Cheese Inc. is a growing plant-based (vegan) cheese company based in Austin, TX. In this role, you are the final quality check before product ships. We're looking for a detail-oriented Quality Control Technician to join our Quality team, working alongside our other QC Techs.
Schedule: Typical hours are 9:00 AM – 6:30 PM, though hours may vary based on business needs. Weekend coverage is required as needed.
What You'll Do:
Calibrate and verify quality control equipment: ATP testing machine, thermometers, scales, and pH meter
Complete and review quality forms (Packaged Product Check, Product Sensory Evaluation/Approval, Pre-Op Inspection, GMP Inspection, calibration logs)
Verify sanitation and GMP compliance across production areas
Monitor and log freezer and refrigerator/cooler temperatures; take corrective action when readings are out of range
Inspect finished product for appearance, texture, and quality; verify expiration/best-by dates and lot/batch coding
Review batch sheets for accuracy and support product traceability
Support HACCP monitoring at Critical Control Points and help maintain audit-ready documentation for third-party food safety audits (FSNS)
What We're Looking For: Bilingual (English/Spanish) strongly preferred — this role involves daily communication with production staff for sanitation and GMP verification
Prior experience in food manufacturing, quality control, or a related field preferred (not required — full training provided)
Comfortable using basic lab/testing equipment (or willing to learn)
Strong attention to detail and reliable recordkeeping
Able to lift up to 40 lbs
Able to stand for the duration of a full shift
Able to work in a refrigerated environment (~35–40°F) for extended periods
Compensation:
Training rate: $19.00/hour (approx. 2–3 week training period)
Rate upon successful completion of training: $21.00–$22.00/hour
(Successful completion = completing the QC training checklist and FSQA Manager sign-off on an independently performed pre-operational inspection)
Growth: This role can grow into a QC Lead or FSQA Coordinator position as our Quality team expands.
Reports To: FSQA Manager
Pay: $19.00 - $22.00 per hour
Expected hours: 40.0 per week
