INTRODUCTION
Reporting to the Head Cook (or his/her delegate), the Sushi Supervisor is responsible for supporting the Head Cook in providing guidance, supervision and sets as a good example for Kitchen Production Assistants to follow. He/she is also responsible for producing the sushi products based on orders received, control quality, inventory and wastage.
ROLE AND RESPONSIBILITIES
You Will:
- Provide guidance and supervision to Kitchen Production Assistants, ensure fair distribution of work and ensure proper scheduling is done
- Supervise the Sushi production processes
- Provide training to Kitchen Production Assistants and provide feedback on staff performance
- Participate in new product research and development process, encourage innovations
- Manage product food safety and ensure FIFO is strictly practiced within the department
- Familiar with product ordering, its process and execution
- Control product quality, inventory level and wastage
- Produce the correct quantity of assigned products based on orders received
- Responsible for the cleanliness, hygiene, equipment and tools maintenance follow up and workplace safety of the production area
BASIC QUALIFICATIONS
You Should Have/Be:
- Minimum of 2 years of related experience
- Possess knowledge and skills in making Sushi products
- Process knowledge and experience in supervising production workflow and controlling cost and wastage
- Ability to deliver Sushi product research and development
- Knowledge of workplace health and safety protocols
- Familiar with relevant tools and equipment, able to interpret product labels
- Possess product knowledge, display, promotion and packaging techniques
- Able to communicate in English, proficiency in Chinese (Cantonese and/or Mandarin) is advantageous
- Basic computer skills in MS Office
- Willing to work flexible shifts, including weekdays, weekends, evenings, and statutory holidays
