About Us: Hana Sushi, located in the vibrant Hampden neighborhood of Baltimore, is seeking a skilled, reliable, and hard-working Sushi Chef to join our team! We pride ourselves on delivering high-quality Japanese cuisine, and we are looking for someone who takes pride in their craft, exhibits precise attention to detail, and thrives in a fast-paced environment.
Responsibilities
- Sushi Preparation: Prepare high-quality sushi, sashimi, and signature rolls consistently according to Hana Sushi’s recipes, portion controls, and presentation standards.
- Fish Prep & Handling: Expertly handle, clean, break down, and portion whole fish with precision, ensuring maximum yield and minimal waste.
- Station Management: Manage prep efficiently at the sushi bar, including cooking and seasoning sushi rice, preparing vegetables, and making house-made sauces before service.
- Sanitation & Safety: Maintain an impeccably clean, sanitized, and organized workstation at all times; strictly adhere to food safety, sanitation, and health department guidelines.
- Inventory & Rotation: Monitor seafood quality daily and ensure proper food storage and rotation (FIFO) to guarantee absolute freshness.
- Teamwork: Work closely with both the kitchen team and front-of-house staff to ensure all orders are ticketed, prepared, and timed perfectly.
- Opening & Closing Duties: Assist with opening and closing procedures, including deep cleaning equipment, sanitizing prep surfaces, and securely breaking down the sushi station.
Requirements
- Experience: Minimum 1+ years of experience working as a Sushi Chef or Sushi Assistant in a fast-paced restaurant environment.
- Skills: Exceptional knife skills, precise fish-cutting techniques, and a thorough understanding of raw seafood food safety practices.
- Physical: Ability to stand for long periods, lift heavy items when necessary, and work efficiently under pressure during peak dining hours.
- Attributes: Great teamwork, strong communication skills, a positive attitude, and a strong work ethic.
- Reliability: Reliable transportation and excellent punctuality.
- Certification: ServSafe or equivalent food safety certification is a plus.
