Food Service Manager 4 (FSM4)
Permanent/ Full Time
Airway Heights Corrections Center
Salary Range: $5,756 - $7,740 Monthly
This position is represented by the Teamsters 117 bargaining unit.
The Department of Corrections is seeking an energetic and qualified individual for the position of Food Service Manager 4 (FSM4) at Airway Heights Corrections Center. Airway Heights Corrections Center is a 2000+ bed male facility located approximately 10 miles west of Spokane. The prison consists of a facility that houses medium and minimum custody incarcerated individuals (I/I). The goal of the Food Service Manager 4 position is to ensure safety and security, oversee quality control and regulatory compliance, provide leadership and training to staff, and manage procurement and inventory supplies.
Whether the work is inside a prison, in community corrections, or in an administrative office, the Washington State Department of Corrections professional staff experience a high degree of personal satisfaction knowing they are creating environments in which all incarcerated individuals can learn to make choices that contribute to a safer society.

Duties
Provide supervision and training of Incarcerated workers and staff as assigned
- Supervise and train Incarcerated workers and/or supervise assigned staff in the training of incarcerated workers in equipment and tool safety, operation, and maintenance as required by equipment user manuals, L&I safety standards, DOC Policies, facility Operational Memoranda, and established expectations prior to operating any equipment.
- Monitor adherence to HACCP, progressive cooking techniques, portion control, and food quality control measures.
- Measure and record food production scrap and tray scrap.
Planning and Scheduling
- Plan and schedule resources and materials based on a master schedule/menu; schedule materials, machinery, and workers to meet completion dates and adjust to meet customer demand.
- Direct and assign incarcerated workers as necessary.
- Utilize quality control measurements to coordinate efforts during food prep and service.
- Coordinate production/scheduling efforts with other staff.
- Coordinate raw material delivery, finished goods delivery and support services.
- Develop and operate preventative maintenance schedule for equipment.
- Monitor and verify SOPs are followed (e.g.: identify and report deficiencies, conduct in-process inspections, verify correct raw material usage).
Ensure staff and incarcerated workers receive safety training and adhere to safety work practices by participating in a Safety and Accident Prevention Program in accordance with DOC Policies
- Maintain proper record keeping for the DOC Safety program.
- Ensure staff and incarcerated workers have access to current DOC Safety Program related manuals, policies, operational memorandums, procedures and standards.
- Within established timelines, review and investigate accident reports to identify what caused the event and recommend preventative measures.
- Participate in and/or conduct monthly Safety Committee meetings.
- Document safety and sanitation inspections as required.
Qualifications
Two years full time work experience as an AC Cook or in private industry, in a food service, food manufacturing, food processing or Institutional feeding environment.
OR
One year full time work experience at the AC Cook level and one year full time work experience in a food service, food manufacturing, food processing or Institutional feeding environment AND one year full time work experience supervising employees, within the past 15 years, in which the supervisory duties included directing the work of the employees supervised and providing employee performance feedback.
OR
Three years full time work supervising incarcerated workers, within a correctional environment in which the supervisory duties included directing the work of the incarcerated, supervised and providing incarcerated worker performance feedback.
AND
- Graduation from high school or equivalent
- Computer literate with a working knowledge of Microsoft Office products or equivalent software programs.
- Effective oral and written communication skills in routine and emergent situations.
- Ability to develop and promote positive and professional interpersonal relationships.
- Ability to set and manage priorities.
- Proficient in HACCP principles
Preferred/Desired Qualifications:
- Three (3) or more years' full time work experience in a food service, food manufacturing, food processing, or institutional feeding environment.
- More than two (2) years full time work experience supervising employees within the past 5 years in which the supervisory duties included directing the work of the employees supervised and providing employee performance feedback.
- Three (3) or more years' full time work experience at the AC Cook level in the food service industry.
- An AA degree or Vocational Certificate/degree from an accredited college or university whose accreditation is recognized by the U.S. Department of Education and the Council for Higher Education Accreditation (CHEA).
- Experience with teaching and training.
- Experience working within a correctional facility.
