PM Cook 2 – Tavernetta Vail
Four Seasons Vail is excited to launch the collaboration of Four Seasons and Frasca Hospitality Group to create Tavernetta Vail. Frasca Hospitality Group, led by Chef Lachlan Mackinnon-Patterson, Master Sommelier Bobby Stuckey, and Peter Hoglund, is dedicated to providing warm and gracious hospitality. Founded in 2004 with the goal of creating "the best neighborhood restaurant in the world," the group opened Frasca Food and Wine in Boulder, Colorado, inspired by the frascas of Italy's Friuli-Venezia Giulia region.
The group has expanded to include the Italian- and European-inspired eateries of Pizzeria Alberico, Sunday Vinyl, and the Michelin Bib Gourmand-awarded Tavernetta in Denver. We seek to continue this expansion here with the opening of Tavernetta Vail by hiring enthusiastic, ambitious, and humble staff to uphold a culture of excellence, education, and respect.
About the role:
This position will prepare food items per guest orders of consistent quality following recipe cards, as well as production, portion, and presentation standards; complete mis en place and set-up station for breakfast, lunch, and/or dinner service while maintaining a safe, sanitary work environment.
What you will do:
- Prepare food items to order on the line and starting items made ahead of time, making sure not beyond estimated needs.
- Responsible for operating, maintaining and properly cleaning kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.
- Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures; check pars for shift use, determine necessary preparation, freezer pull and line set up; note any out-of-stock items or possible shortages; return all food items not used to designated storage areas, being sure to cover/date all perishables; assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per policies.
- Work harmoniously and professionally with co-workers and supervisors.
What you bring:
- 2+ years culinary or related work experience and intermediate culinary knowledge is expected for this position, cooking school or culinary institute education or equivalent experience is required, proficient knife skills and ability to multi-task.
- Must have working knowledge of computers.
- Must be able to lift a minimum of 50 lbs and stand for 8 hours.
- Exhibit excellent interpersonal and time management skills.
- Demonstrate strong organizational skills and possess the ability to work autonomously.
- Fluency in English is required for this location and this job requires applicants to have current work authorization in the in the United States.
