THE JOB:
The Corporate Executive Director of Beverage will develop and lead the beverage program vision, philosophy and strategy for MGMRI Food & Beverage. They will lead the MGM Resorts' beverage teams, drive the execution of Company initiatives, and build alignment throughout the organization to ensure the strategic goals of the company are met. In addition, they will manage the end-to-end beverage concept development, pre-opening and opening support for venues with beverage menu programming.
THE DAY-TO-DAY:
- Drive the execution of Continuous Improvement and other Food & Beverage initiatives that enhance the beverage operations and results. Identify best practices and benchmarks of quality within key business segments in and outside the company. Own the development of robust standards and guidelines for menu programming, sourcing, labor standards, and Corporate Social Responsibility.
- Develop and lead the strategic vision of MGMRI beverage operations and development. Lead in research and development of beverage trends, concepts and technology. Assists the F&B Development team in developing the beverage program positioning for the company’s food and beverage portfolio strategy (master planning, partnerships, marketing etc.). Develops conceptual beverage/mixology programming and bar design for new resort developments.
- Lead and stand-up beverage teams through pre-opening and opening phases for new or rebranded venues, property integrations, and new resort openings. Leads and oversees ongoing training in spirits knowledge, brand awareness, bartending fundamentals, techniques, etc. for bartenders and beverage leaders across the enterprise. Collaborate with vendors/suppliers as needed to support ongoing spirits education for MGMRI employees.
- Work with F&B Yielding group to provide operational insights and strategic input regarding beverage menu engineering, pricing and promotions.
- Leads Beverage Committee to ensure alignment with MGMRI standards and ongoing development of beverage talent pipeline. Participates in the interviewing process for property Directors of Beverage.

- As an expert in large-scale beverage programming, they bring comprehensive mastery over all aspects of beverage operations, including strategic concept planning, creative production, premier presentation, and meticulous financial and quality controls.
