Program Structure & Key Learning Areas:
Phase 1: Orientation (Month 1)
- Introduction to resort culinary operations, including restaurants, bars, and catering
- Overview of buffet service, poolside dining, and event operations
- Training on kitchen layout, equipment, safety protocols, and sanitation standards
- Familiarization with company policies, guest service expectations, and team dynamics
Phase 2: Culinary Fundamentals (Months 2–4)
- Hands-on training in basic cooking techniques including knife skills, sautéing, grilling, and baking
- Preparation of foundational recipes such as sauces, stocks, and dressings
