General Manager — Entertainment Experience The Drunken Laboratory | Brooklyn, NY| Full-Time | $85,000–$95,000/year + Quarterly Bonuses

About the Role The Drunken Laboratory is a high-energy nightlife and entertainment venue featuring immersive live shows. We are seeking a General Manager to lead daily operations, manage inventory and cost controls, and ensure every show runs smoothly. This is a hands-on, in-venue leadership position requiring both floor presence during live shows and full ownership of the operational and financial side of the business.

Applicants Must Know How To:

• Manage liquor, beer, and wine inventory — including par levels, vendor ordering, receiving, stock rotation, and waste tracking
• Calculate and control pour cost and cost of goods sold (COGS)
• Reconcile inventory counts against POS sales data and identify variances
• Manage vendor and distributor relationships, including pricing negotiations, delivery schedules, and invoice reconciliation
• Build and manage staff schedules while controlling labor cost against budget
• Use inventory management systems (e.g., BevSpot, Partender, BinWise) and POS platforms (e.g., Toast, Square)
• Lead, hire, train, and coach a team of Shift Managers and floor staff
• Handle live, in-the-moment operational issues and guest escalations
• Ensure compliance with local alcohol service laws and safety standards, including liquor license requirements

Responsibilities:

• Own daily operations and live show execution from open to close
• Lead Shift Managers and all floor staff
• Hire, train, and coach team members
• Build schedules and ensure coverage for all shows
• Manage inventory, ordering, and cost control across all bar operations
• Monitor performance, guest experience, and team standards
• Handle escalations and operational issues in real time
• Prepare weekly and monthly reporting on inventory, cost of goods, and labor
• Ensure compliance with local safety and alcohol service standards

Requirements:

• Minimum 3 years of experience as a General Manager or senior operations leader in a bar, nightclub, or high-volume hospitality venue with full P&L and inventory ownership
• Demonstrated experience with liquor inventory management, pour cost analysis, and vendor ordering
• Strong leadership, scheduling, and operational execution skills
• Ability to manage multiple priorities in a fast-paced environment
• Availability to work nights and weekends is required, based on the live show calendar

Compensation & Benefits:

• $85,000–$95,000/year (or hourly equivalent)
• Performance-based quarterly bonuses, up to $5,000/year
