GENERAL MANAGER — RESTAURANT

Han Dynasty Restaurant Group is seeking an experienced, hands-on General Manager to lead the opening and ongoing operation of one of our successful locations in New York.
Known for bold, authentic Sichuan cuisine and a high-energy dining experience, Han Dynasty is looking for a hospitality leader who understands that a successful restaurant is built through great people, disciplined operations, exceptional food and service, and consistent financial performance.
This is a key leadership position with responsibility for building and motivating the team, establishing the restaurant's culture and operating standards, executing a successful opening, and delivering strong long-term results.
THE ROLE
The General Manager will have full responsibility for the day-to-day operation and performance of the New York restaurant, working directly with the Director of Operations and ownership.
The ideal candidate is equally comfortable on the dining room floor, reviewing a P&L, coaching a manager, resolving a guest issue, analyzing labor, and preparing the restaurant for a busy service.
This is not a desk-management position. We are looking for a visible, engaged leader who sets the standard through presence, accountability, and example.
KEY RESPONSIBILITIES
New Restaurant Opening
- Partner with senior leadership to execute all aspects of the New York operations.
- Recruit, interview, hire, train, and develop the opening management and hourly teams.
- Establish par levels, operating systems, service standards, training procedures, and daily routines.
- Coordinate pre-opening training, mock services, opening inventories, vendor readiness, and operational setup.
- Ensure the restaurant is fully prepared for opening day and the critical first months of operation.
Operations & Guest Experience
- Lead all daily FOH and BOH operations while maintaining Han Dynasty's standards for food, hospitality, cleanliness, and execution.
- Maintain a strong presence during peak services and actively manage the guest experience.
- Ensure consistent execution of company service standards and operating procedures.
- Handle guest feedback professionally and use it to improve the operation.
- Maintain restaurant facilities, equipment, organization, sanitation, and appearance at a consistently high level.
Financial Performance
- Take ownership of restaurant-level financial performance and P&L results.
- Develop and manage labor based on forecasted sales and business needs.
- Monitor food, beverage, labor, operating expenses, purchasing, waste, and controllable costs.
- Review sales, PPA, product mix, labor productivity, COGS, inventory, and other operating KPIs.
- Identify opportunities to increase revenue while protecting profitability and the guest experience.
- Participate in budgeting, forecasting, inventory management, and financial reviews.
Leadership & Team Development
- Build a culture of accountability, professionalism, teamwork, and hospitality.
- Recruit and retain strong management and hourly talent.
- Coach and develop managers into effective restaurant leaders.
- Conduct productive pre-shifts, manager meetings, training sessions, and performance conversations.
- Establish clear expectations and consistently hold the team accountable to them.
- Create an environment where employees are supported, challenged, and given opportunities to develop.
Compliance & Safety
- Maintain compliance with all applicable New York and local health, safety, labor, liquor, and employment requirements.
- Maintain accurate restaurant documentation and required certifications.
- Ensure proper food-safety, sanitation, cash-handling, alcohol-service, and workplace-safety procedures.
WHAT WE'RE LOOKING FOR
- 5+ years of restaurant management experience, with significant General Manager or senior restaurant leadership experience strongly preferred.
- Experience in a high-volume, full-service restaurant environment.
- New restaurant opening experience strongly preferred.
- Demonstrated knowledge of restaurant P&L management, budgeting, labor management, COGS, inventory, purchasing, and cost controls.
- Strong understanding of both FOH and BOH operations.
- Proven ability to recruit, train, develop, and retain high-performing teams.
- Strong leadership presence and willingness to work alongside the team.
- Excellent communication, organization, problem-solving, and decision-making skills.
- Ability to operate effectively in a fast-paced, high-volume environment.
- Availability to work the schedule required by the business, including nights, weekends, and holidays.
- Knowledge of Sichuan or Chinese cuisine is valuable but not required. Strong restaurant leadership and a genuine willingness to learn the cuisine are more important.
