About Norikase
Norikase is a chef-driven Japanese dining concept focused on exceptional hospitality, elevated cuisine, and a refined guest experience. We are seeking an experienced General Manager to lead our restaurant operations, develop our team, maintain high service standards, and drive strong financial performance.
This is a hands-on leadership position for someone who understands the expectations of fine dining and can balance exceptional hospitality with disciplined restaurant operations.
Responsibilities
The General Manager will oversee all aspects of day-to-day restaurant operations, including:
- Lead and manage overall front-of-house restaurant operations
- Recruit, interview, hire, onboard, train, coach, and develop employees
- Build and maintain a strong service culture centered around hospitality and attention to detail
- Establish and maintain fine dining service standards
- Conduct pre-shift meetings and ongoing employee training
- Create and manage employee schedules based on projected business levels and labor targets
- Monitor labor costs and make appropriate staffing adjustments
- Monitor COGS and work with leadership and culinary teams to meet established financial goals
- Maintain and report on key performance indicators (KPIs)
- Review sales, labor, COGS, guest feedback, and other operational metrics
- Identify opportunities to improve profitability without compromising quality or guest experience
- Manage employee performance, accountability, disciplinary actions, and recognition
- Ensure company policies, procedures, and operating standards are consistently followed
- Maintain proper opening, closing, cash-handling, and daily reporting procedures
- Oversee reservations, table management, pacing, and overall flow of service
- Handle guest concerns professionally and provide appropriate service recovery
- Maintain strong knowledge of the menu, beverage program, ingredients, and restaurant offerings
- Collaborate closely with chefs and culinary leadership to ensure seamless FOH and BOH communication
- Maintain restaurant cleanliness, organization, presentation, and readiness for service
- Ensure compliance with food safety, sanitation, workplace safety, and applicable regulations
- Manage inventory procedures and assist with controlling waste, loss, and unnecessary expenses
- Participate in management meetings and communicate restaurant performance, challenges, and opportunities to ownership
- Help develop and implement systems and SOPs that improve efficiency and consistency
- Lead by example and maintain a visible presence on the restaurant floor during service
Qualifications
- Fine dining restaurant management experience required
- Previous General Manager, Assistant General Manager, Restaurant Manager, or comparable leadership experience strongly preferred
- Strong understanding of fine dining service standards and guest expectations
- Proven experience hiring, training, coaching, and managing restaurant teams
- Working knowledge of restaurant financials, including labor, COGS, sales, inventory, and profitability
- Ability to understand, track, and improve KPIs
- Strong leadership, communication, organization, and problem-solving skills
- Ability to remain composed and make effective decisions in a fast-paced environment
- Strong attention to detail and commitment to hospitality
- Experience with restaurant POS, reservation, scheduling, and inventory systems preferred
- Flexible availability, including evenings, weekends, and holidays as required by the business
Compensation & Benefits
Starting salary: $60,000+ annually, based on experience
The General Manager will also have the opportunity to earn performance-based bonuses tied to achieving established COGS and labor goals.
