INTRODUCTION
The iconic Hotel del Coronado is looking for a Chef de Partie to join the Shore House team! Join one of the last surviving wooden Victorian beach resorts in the world and after a $400M renovation and expansion, the resort is more stunning than ever.
Located on Coronado Island just minutes from Downtown San Diego, this 28-acre property was built in 1888 and has over 750 rooms, cottages, and villas with 65,000 square feet of banquet space, and 10 food and beverage outlets. This includes 4 restaurants, 2 bars, a food truck, marketplace, ice cream shop, and in-room dining.
Classification: Full-Time
Shift: Various – must be available to weekdays, weekends, and holidays.
Pay Rate: The pay rate for this role is $32-$35 per hour and is based on applicable and specialized experience and location.
What will I be doing?
The Chef de Partie is responsible for preparing, seasoning, cooking, and testing food items for the hotel’s food and beverage outlets. This role ensures that all dishes meet established standards of quality, presentation, and taste, while maintaining compliance with health, safety, and sanitation regulations. The Chef de Partie provides guidance and direction to kitchen team members within the scope of responsibilities and may assume leadership duties in the absence of the lead chef.
Key Responsibilities:
- Prepare, season, cook, and test food items to ensure quality, consistency, and presentation standards are met.
- Maintain compliance with all federal, state, local, and company health, safety, and sanitation guidelines.
- Provide day-to-day direction and support to line cooks, including training, task assignments, and feedback.
- Assist with staff scheduling and contribute to performance evaluation processes as directed by the lead chef.
- Responsible for food ordering, verifying closing paperwork such as cleaning schedules and station production list.
- Act as a point of contact and assume supervisory responsibilities in the absence of the lead chef.
- Monitor inventory levels, communicate needs, and assist with maintaining proper food storage and rotation.
- Collaborate with the culinary team to ensure smooth and efficient kitchen operations.
- Uphold company service standards, ensuring a positive dining experience for all guests.
- All other duties as assigned.
