INTRODUCTION
Two Graduate Research Assistantship opportunities at Tennessee State University (Fall 2026)
These Graduate Research Assistantships are intended to support a two-year Master’s degree program in the Department of Food and Animal Sciences. Successful candidates will work with Prof. Siyuan “Steven” Sheng on the following topics:
Chemical Safety: Analysis of chemical contaminants formed during the manufacturing, processing, and storage of meat products.
Meat Quality: Improvement of fresh and processed meat quality traits.
Sensory Science: Consumer sensory evaluation and analysis of meat products.
Industry Application: Labor development, automation, and meat science extension education.
Note: Research activities will initially take place at the University of Wisconsin-Madison Meat Processing Lab. Work will transfer to the new Food and Animal Sciences building at Tennessee State University upon its completion in December 2026.

REQUIRED DOCUMENTS
Required Documents include:
- Equivalent of the bachelor’s degree with a major in Chemistry/Agricultural Sciences/Food Science/Animal Science/Biological Science or related studies.
- Prior knowledge in instrumental analysis (HPLC, GC, MALDI etc.)
- Official Academic Transcript
- GRE Test Score required
- TOEFL/IELTS Score required (for international students only)
