Meat Department Manager / Head Butcher

Pierce Creek is a family-owned local food business in Creve Coeur: restaurant, butcher shop, bakery, market, and food truck, all built around from-scratch cooking and local ingredients. We raise our beef without hormones or antibiotics and partner with local farms for poultry, lamb, and pork. Our newly remodeled meat cutting room is a major investment in our goal of being the best butcher shop in mid-St. Louis County.

We're looking for a working manager to run the meat department. You'll cut, lead, and manage how the department looks and feels as well as manage inventory and the compliance side. You will have real input into how the department grows.

What you'll do

• Run daily meat department operations: cutting, case merchandising, custom orders, and “the counter” experience
• Break down whole and primal carcasses (beef, pork, lamb, poultry) and manage a cutting program that maximizes yield and minimizes shrink
• Manage food safety and compliance: HACCP plans, sanitation SOPs, temperature and receiving logs, labeling, traceability, and inspection readiness
• Assist with ordering from farms and vendors, manage inventory, and track cost, pricing, and margins.
• Help hire, schedule, train, and coach the butchery team
• Work with the General Manager and owners on product mix, pricing, specials, and menu support for our restaurant.
• Build relationships with regular customers and offer cooking advice and recommendations

What you bring

• 5+ years of butchery experience across beef, pork, lamb, and poultry, including at least 1–2 years in a lead or management role
• Working knowledge of HACCP, with experience writing or maintaining plans
• Knowledge of retail meat regulations (FDA Food Code, St. Louis County health requirements, labeling rules)
• Current ServSafe certification (or willingness to obtain within 30 days) and Hep A
• Comfort with ordering, inventory, and margin management, plus POS, scale/label, and spreadsheet skills
• Reliable, positive, hands-on, and a good teacher

A plus

• Experience with dry aging, sausage-making, curing, and smoking
• Experience with USDA-inspected or wholesale production
• Ability to talk about our farm partners with customers

Physical requirements

Standing for full shifts, lifting up to 50 lbs, and working in cold environments and around knives and power equipment. Weekend and some holiday availability may be required.

• $18 to $30 per hour, depending on experience, salary possible.
