THE JOB:
Lead the charge in food safety and sanitation at MGM Grand as our F&B Sanitation & Safety Manager, where your expertise will help protect our guests while elevating culinary excellence! Partner with passionate culinary teams, drive world-class safety standards, and make a lasting impact behind every exceptional dining experience.
THE DAY-TO-DAY:
- Assure compliance with all government regulations for all permitted facilities. Maintain Health District Food Regulations and MGM Resorts Food Safety Sanitation Standards and Policies.
- Maintain professional working relationships with various internal departments and relationships with external regulatory agencies to include SNHD, FDA, USDA, OSHA, third-party vendors, and any other relevant regulatory agencies
- Maintain Food and Beverage Food Safety Training Courses working closely with Division Training Manager and other MGMRI Learning & Development personnel
- Conduct internal inspections of all pantries, bars, lounges, kitchens, retail operations, and warehouse facilities
- Ability to collaborate with and constructively coach personnel on all levels and to proactively correct and address environmental health issues within different departments. Be involved with all environmental health issues throughout the hotel
- Ensure FOH and BOH employees meet both state and departmental requirements concerning food handling, sanitation and personal hygiene
- Identifies training opportunities within the department and provides employees with proper Food Safety Sanitation Training
THE IDEAL CANDIDATE:
- Bachelor's Degree or related field preferred
- 1+ Years of prior relevant experience working in a Food and Beverage setting
- Serv Safe/ANSI-accredited Food Safety Manager Instructor/Proctor Certification preferred
- Working Knowledge of PC Computer Software (MS, Word, Excel, PowerPoint) preferred
- Previous experience working in F&B operations within a major hotel/casino or in a similar resort setting preferred
